Milk and Milk Products: Introduction, classification, packaging and storage, production of butter, cream processing, method of preparation, paneel from cow milk, classification of cheese.
Dairy Technology and Processing: Milk composition, properties and nutritional role, milk reception operations at dairy plant, fluid milk varienties and special milks, cream sepration, milk pasteurization, sterilization, effluent treatment and dairy plant waste disposal.
Quality Control and Food Safety: Dairy processing and quality assurance, dairy industry: production and consumption trends, chemical composition physical and functional properties of milk and milk ingredients, regulations for product standards and labeling, ingredients in dairy products, fluid milk products, dry milk products.
