Introduction to Food Canning and Preservation: Meaning of preservation, history and methods of preservation, purpose of preservation, meaning of purees, methods of preparing purees.

Food Safety and hygiene in Canning:  Microbiology, food contamination and spoilage, food preservation, food- borne diseases, purchase and storage of food, sanitary procedures while preparing holding serving and displaying food, special food operations.

Food Quality Control in Canning: Introduction, principles and functions, plan and methods of quality control, sampling techniques requirements and sampling procedures for, food laws and regulations in India, general  hygiene and sanitation in food industry.

Equipment and technology in Food Canning: Properties of foods and processing theory, material transfer, fluid flow, heat transfer, water activity, effects of processing on sensory characteristics of foods, effects of processing on nutritional properties, computer based systems, enzyme technology.

Canned Food Packaging:  Introduction, product characteristics, environmental factors, microbiological changes, microbiological processes, physical and physico- chemical processes, migration from packaging to foods, basic functions of packaging.

Food Canning Process: Selection and procurement, supply chain of fruits and vegetables, primary processing of fruits and vegetables,  preservation by chemicals, special packaging systems, storage of fruits and vegetables.
