Fundamentals of Food Processing: Introduction, different sub-sectors under food processing, scope of food processing, principles of food preservation and food processing, minimal processing of fruits and vegetables, drying, canning, fermentation.
Food Chemistry: Introduction, objectives, history of food chemistry, functions of food chemistry, post-harvest physiology of fruits and vegetables, carbohydrates, lipids, proteins, enzymes, water, food carbohydrates, minerals in food, food additives.
Fundamentals of Milk Processing: Introduction, milk reception operations, storage of milk, importance of milk and its constituents, packaging of milk and milk products, methods of milk preservation.
Food Hygiene: Introduction, food safety, quality in food, food hazards, food safety and quality systems, hazard analysis and critical control points (HACCP).
Sanitation: Introduction, sanitation and hygiene, open defecation, improved sanitation, types of waste, important sanitation schemes in India.
Therapeutic Nutrition: Introduction to medical nutritional therapy, adaptation of therapeutic diets, nutritional managements of infections and fevers, nutrition during stress, nutritional care in weight management, nutritional management of renal diseases, paediatric and geriatric nutrition.
