Spice Cultivation and Harvesting: Ginger, turmeric, black pepper, cardamom, coriander, oil palm, opium and stevia, coleus and plantgo, aswagandha.

Spice Processing Techniques: Introduction to food processing industry, roles and responsibilities of spice processing technician, planning for spice production, basics of spice processing, personal hygiene, health safety.

Quality Control and Testing Grinding: Preparation of sample, determination of alcohol soluble extract, black pepper, saffron, turmeric whole, microscopic examination of spices, detection of mineral oil in black pepper, detection of turmeric in chillies and corriander, method for measuring colour value in chillies.

Business Management: Introduction, prepare and maintain work area, prepare and maintain process machineries, clean spices, produce dried and sterilized spices, produce spice powders, pack and sterilize spice products, post production cleaning and regular maintenance of equipment, safety and sanitation functions.
