Fruit Juice Processing: Introduction, types of fruit juices, juice extraction, pasteurization, production of fruit juice powder, drying methods for fruit juice powders production.
Fruit Juice Extraction Methods: Thermally processed fruits and vegetables (canned), thermally processed fruit drink, beverages, pulp, juice, puree (canned, bottled poly packed), soup powders, fruit and vegetable cereal flakes, tomato ketchup, sauce, culinary paste, dehydrated fruits and vegetables.
Fruit Selection and Handling: Flow chart for post- harvest handling of fruits and vegetables, post- harvest handling, maturity index for fruits and vegetables, harvesting container, tool for harvesting, handling protocol for selected fruits.
Juice clarification and filtration: Introduction to fruit and vegetable processing, attributes of a squash and juice processing technician, equipment used for fruit pulping, sanitization of work area, cleaning processes, perform fruit juice extraction process, pasteurize and clarify the extracted juice, sanitation and hygiene.
Pasteurization and Preservation Techniques: Introduction, factors affecting growth of spoilage and pathogenic microorganisms in food, microbiology of food spoilage, food borne disease agents, detection methods for food borne microorganisms.
Quality Control Juice Production: Introduction, spoilage of fruit juice, chemical preservation process, classification of food additives, extraction of crude natural preservatives.
