Principles of Accounting:  Need for accounting, objectives of accounting, methods of accounting, types of accounts, basic accounting concepts, profit & loss account, need for suspense account.

Health and hygiene: Objectives, hygiene, disease, immunization: protection against certain communicable diseases, first aid, prevention of substance abuse, some modern day diagnostic techniques.     

Advance beverage services: Introduction, classification of non-alcoholic beverages, concept of restaurant, restaurant service &its types, taking bookings for table service, preparation for service, coordination with other departments of hotel.

Quantity food production: Introduction, benefits of food analysis, food safety, quality control, methods of food quality control, food service management.
